Shrimp omelette
The SHRIMP TORTILLA, originally from the province of Cádiz, Andalusia, is a tortilla made from wheat flour, chickpea flour, water, salt, scallion or onion, parsley and shrimp. A flat liquid dough is made and fried in the pan in abundant oil
Ingredients:
- 250 Grams Shrimp tails (Clean)
- 1 Unit Onion (Cut into squares)
- 1 Chinese Onion Unit (Cut into squares)
- 3 Units Eggs
- 2 Tablespoons Flour
- to taste pepper
- to taste salt
- 2 Servings White rice

- Clean the shrimp very well and cut into halves
- In a bowl, beat the 3 eggs, add pepper, salt and flour, mix very well
- Add onion and Chinese onion; Add the shrimp and mix very well.
- Place a frying pan on the heat with a drizzle of oil and spread it all over the pan.
- When it is very hot, add half of the smoothie and let it brown.
- Cover it so that it concentrates and lower the heat that cooks very slowly.
- Most know shrimp a bit before putting it in the batter, but you miss out on the spectacular flavor.
- So by cooking it over low heat, it guarantees their cooking and its juice remains intact.
- Now turn the tortilla and do the same procedure
- Serve it accompanied with grained white rice
